When it comes to comfort food, few dishes can compete with the heavenly indulgence of stuffed potato skins. Those scooped-out potato bits go into a bowl to become our filling. Brush the skins with a bit of oil and put them back in that 400 degree oven while we make the filling.


For the filling, we're keeping it dairy-free by using a creamy alternative. Prepare mashed potatoes using your scooped-out potato flesh, oat milk, vegan butter, garlic and pepper. Here's where it gets good- mix in shredded chicken (you can opt for a vegan substitute if you prefer or omit altogether). After I cook up a few chicken breasts I put them in the ninja until its fine. Add it right to the mixture.



**Bake Again for Bliss: Bringing it All Together**


Now comes the fun part – stuffing those hollowed-out potato skins with your dairy-free mashed potato and chicken mixture. Be generous with the filling, piling it high for that ultimate comfort food experience.


Once your skins are stuffed to satisfaction, they go back into the oven for 20 minutes. This bake ensures that everything is heated through, and the flavors meld together beautifully.

To add the finishing touches, top your stuffed potato skins with a dollop of vegan sour cream for that classic tangy kick(Kite Hill is my go to). Don't forget the chopped chives for a burst of freshness and color.
